to cook something exactly how you want.
But when you sous vide a steak...
All you need to do is prep the meat,
vacuum seal it, and set the temperature to 56 degrees.
The machine takes it from there.
Then you just add salt and pepper and fire it to get a nice color,
and you've got a medium-rare steak.
Sous vide means you never have to worry about uneven cooking.
